Chicken is the most versatile protein in our kitchen — it shows up in the regional masalas of North India (butter chicken, chicken tikka masala, chicken korma), the dum biryanis of Hyderabad and Lucknow, the chilli-and-soy heat of Indo-Chinese cooking (chilli chicken, chicken manchurian, schezwan chicken), the slow-cooked stews of Persian and Levantine kitchens, and the trattoria-style Italian and Mediterranean dishes that built modern American casual dining.

Our chicken recipes use cuts you can actually find: bone-in for the curries that need depth, boneless thighs for the marinades and tikkas, breasts for the quick weeknight stir-fries. We've tested every recipe with halal chicken bought in Dubai, India, and the UK, and called out when a cut is genuinely substitutable and when it isn't.

Marinades matter — most of these recipes ask for 30 minutes minimum, and a few of the biryanis benefit from overnight. We've ordered the recipes so the active cook time is always called out separately from the marinate-and-rest time.
