Ginger and garlic are the two most powerful flavours in the Asian culinary pharmacopoeia -- not just flavourings, but functional foods with genuine anti-inflammatory and antimicrobial properties. This soup puts them front and centre, using enough of both that the broth tastes distinctly of them, not just seasoned by them. It's the soup that gets made when someone in the house has a cold, and the reason it works is both culinary and biochemical.
Frying some of the garlic until golden and crispy before adding the rest to the soup creates two experiences of the same ingredient: the fried garlic garnish on top is sweet, nutty, and caramelised; the ginger-garlic broth underneath is sharp, pungent, and warming. Together they make the soup more complex than a single treatment of each would achieve.
Turmeric adds anti-inflammatory curcumin, sesame oil adds depth and a toasty note that rounds out the garlic, and lemon juice at the end brightens everything. The result is a soup that is genuinely therapeutic -- warming from within, clearing the sinuses, and comforting in the most functional sense. Use the most ginger you can bear. The warmth from fresh ginger is different from spice heat -- it spreads slowly through the chest and throat rather than hitting the tongue immediately.

Method
- 1Heat oil in a pot. Add sliced garlic and fry until golden and fragrant -- watch it carefully, it burns quickly. Remove half for a crispy garnish.
- 2Add grated ginger to the remaining garlic in the pot; stir 1 minute until the raw smell cooks off.
- 3Pour in chicken stock and turmeric; bring to a boil. Add sliced chicken and simmer 8 minutes.
- 4Add soy sauce, white pepper, and salt. Taste -- the ginger and garlic should be the dominant flavours.
- 5Off the heat, stir in sesame oil and lemon juice.
- 6Serve in bowls topped with spring onions, coriander, and the reserved crispy garlic.
