Mango chilli chicken is a summer barbecue recipe with an Indian pantry backbone. Ripe mango brings sweetness and body, lime keeps it sharp, and Kashmiri chilli gives colour without overwhelming the fruit. It is not a traditional tandoor recipe, but it sits comfortably on a Desi table because the spice balance is familiar.

Fruit glazes can burn quickly, so the timing matters. Most of the mango mixture works as a short marinade, but the final sticky shine comes from brushing reserved glaze onto the chicken only at the end. That gives you caramelised edges without black, bitter sugar. Thighs are the safest choice, though breast strips work if you watch the grill closely.

Serve this with jeera rice, cucumber salad or as a standalone skewer platter. It is high-protein, bright, and useful for outdoor cooking because the flavour feels festive without requiring a long ingredient list.

Method

  1. 1Mix mango puree, lime, ginger-garlic, chilli powder, chilli flakes, cumin, garam masala, oil, salt and honey.
  2. 2Reserve 2 tbsp marinade for glazing, then coat the chicken with the rest.
  3. 3Marinate for 25-30 minutes; do not leave it overnight because the fruit can soften the texture too much.
  4. 4Grill chicken over medium-high heat for 4-5 minutes per side.
  5. 5Brush with the reserved mango glaze during the last minute only, letting it bubble and turn sticky.
  6. 6Scatter mint and coriander over the hot chicken and serve with rice or salad.
