Method

  1. 1Beat olive oil, lemon, oregano, paprika, garlic and salt; marinate chicken 25 minutes.
  2. 2Thread on skewers or arrange on a tray, grill at 230C for 14 minutes till the edges char.
  3. 3Toss cucumber, tomato, red onion and olives with a drizzle of olive oil and lemon.
  4. 4Layer bowls: quinoa base, salad, grilled chicken on top.
