Eggetarian recipes — eggs welcome, no meat or fish.
Eggetarian is a specifically South Asian category — eggs allowed, meat and fish not. It's the diet a lot of urban Indian and Pakistani families default to, and a lot of Jain-adjacent kitchens move into during festival seasons when meat is off the table but eggs are still acceptable.
Our eggetarian section includes the obvious Indian classics (anda curry, masala omelette, akoori, egg burji, egg biryani) and the global cooking that depends on eggs as a centrepiece (Spanish tortilla, shakshuka, Persian kuku, frittatas, Japanese tamagoyaki). Most of these dishes scale well and freeze terribly — eggs are best cooked fresh.
