Bright, sour, smoky home cooking — the Indian palate's natural cousin.
Mexican food and Indian food share more DNA than either cuisine usually gets credit for. Both are built on a dry-spice toolkit (cumin, chilli, oregano), both use fresh aromatics aggressively (onion, garlic, coriander), both have a sour anchor in the meal (lime in one, tamarind in the other), and both treat fresh tortilla/roti as a primary plate.
Our Mexican recipes lean toward the dishes that an Indian home cook can actually execute: tacos and quesadillas (the masala-style soft-taco approach), enchiladas (the casserole format that scales to feeding a family), guacamole (which lives forever on an Indian palate), and a few sauces — adobo, salsa verde, mole-style — that are forgiving and freeze well.
Our Mexican recipes are calibrated for the Indian palate, which means more heat, more lime, and less reliance on cheese than you'd find in a Tex-Mex restaurant. Almost all have a vegetarian variant, and the chicken-and-beef dishes use cuts that are easy to find in the Gulf and South Asia.
