Method

  1. 1Blend coriander, mint, chillies and ginger-garlic to a tight green paste.
  2. 2Mix paste with hung curd, roasted besan, chaat masala, mustard oil, lemon and salt.
  3. 3Coat chicken thoroughly; rest minimum 1 hour, ideally overnight.
  4. 4Skewer with onion petals. Roast at 220°C for 16 minutes, turning once, till edges blacken and juices run clear.
  5. 5Finish with chaat masala.

About this recipe

Substitute 300 g firm tofu and reduce grill time to 12 minutes.
