About this recipe
These skewers take the flavour memory of butter chicken and turn it into barbecue food. The chicken is grilled first so it develops real char, then brushed with a small amount of tomato-butter masala glaze. You get the familiar orange, creamy, kasuri methi finish without drowning the meat in sauce.
The glaze is intentionally quick and concentrated. Butter, tomato puree, kasuri methi and a splash of cream simmer into something that clings to skewers instead of running off. Brush it on after the chicken is almost cooked; if it goes on too early, the dairy and tomato can burn before the chicken is ready.
Serve with roti, rice, onion and a little extra glaze for dipping. It feels more special than plain tikka but is still practical for a grill pan or outdoor barbecue. The recipe is high-protein, no-deep-fry, and ideal for anyone who likes butter chicken but wants a less saucy main.

- 1Marinate chicken with yogurt, ginger-garlic, chilli powder, garam masala, lemon and salt for 30 minutes.
- 2Thread chicken and onion onto skewers while the grill heats.
- 3Simmer butter, tomato puree, kasuri methi and cream for 3-4 minutes to make a quick butter masala glaze.
- 4Grill skewers for 10-12 minutes, turning until the chicken is cooked and charred.
- 5Brush the hot skewers with the butter masala glaze and grill 1 more minute so it clings.
- 6Serve with naan-style roti, rice, onion and extra glaze on the side.
