Method
- 1Gently gently bubble chicken till just cooked; shred.
- 2Char tomatoes on direct flame; blend with onion, garlic, chipotle, oregano, cumin.
- 3Heat oil, pour purée; cook 5 min till deeper red.
- 4Add stock + shredded chicken; gently bubble 12 min till sauce hugs chicken.
- 5Salt + coriander.
- 6Pile on tostadas with crema, avocado, more coriander.
