Grate it fresh if possible; pre-ground nutmeg is not the same.

Method
- 1Melt butter in a pot. Fry onion, garlic, and ginger until soft. Add turmeric and cumin powder, stir 1 minute.
- 2Add diced chicken and cook 3 minutes until sealed on all sides.
- 3Pour in chicken stock and bring to a boil. Simmer 10 minutes until chicken is cooked through.
- 4Add spinach in large handfuls and stir until completely wilted -- about 2 minutes. Don't overcook the spinach.
- 5Use a stick blender to puree the soup until smooth and vibrant green. Season with salt, white pepper, and nutmeg.
- 6Serve in bowls with a drizzle of cream swirled through if using. The soup should be a brilliant green.
