Method
- 1Warm beans with cumin and salt; mash slightly.
- 2Heat oil, lightly cook until crunchy tortillas 1 min each side; set on plates.
- 3Spread beans, then ladle hot salsa over each tortilla.
- 4Fry eggs sunny-side-up in remaining oil.
- 5Slide an egg onto each tortilla.
- 6Scatter cheese, coriander, jalapeño, avocado; serve hot.
