Method
- 1Beat eggs + milk + salt + pepper.
- 2Heat butter; fry pepper, onion, mushrooms till soft; put aside.
- 3Pour eggs in pan; tilt to spread; cook down heat.
- 4When edges set, scatter veg + cheese over one half.
- 5Fold over; cover 30 sec to melt cheese.
- 6Slide onto plate; chives; serve immediately.
