Method

  1. 1Heat oven to 180C; whip egg whites with a pinch of salt + baking powder to stiff peaks.
  2. 2Beat yolks with yogurt and parmesan till smooth.
  3. 3Fold whites into yolks gently — keep the air.
  4. 4Spoon four cloud rounds onto a lined tray.
  5. 5Bake 18 minutes till golden and firm.
  6. 6Top with avocado, chilli flakes, chives, flaky salt and olive oil — low-carb breakfast theatre.
