Method

  1. 1Melt butter on a wide tawa, fry ginger, green chillies and onion till translucent.
  2. 2Add tomato, turmeric, chilli, pav bhaji masala and salt; cook till the mix pulps.
  3. 3Beat eggs lightly; pour in and stir for soft creamy curds — keep just slightly underdone.
  4. 4Toast split pav cut-side down with butter till deeply golden.
  5. 5Finish bhurji with coriander; mound onto pav.
  6. 6Squeeze lemon — eat immediately, true Mumbai street style.
