Method
- 1Roast besan in 1 tbsp oil till toasted-tasting.
- 2Heat remaining oil, crackle cumin-mustard, curry leaves, dry chillies.
- 3Add tomato puree + turmeric + chilli; cook 5 min.
- 4Beat besan with 4 cups water, pour in; bring to gently bubble.
- 5Add potato + drumstick first (longer cook), then okra and gawar.
- 6Tamarind + salt; gently bubble till shiny. Serve ladled over rice.
