Method
- 1Mix besan + sesame + peanut + greens + ginger-chilli + turmeric + salt + jaggery + tamarind + 1 tbsp oil — stuffing.
- 2Slit baby potatoes and brinjals; stuff with the mix.
- 3Heat oil in heavy pot, crackle ajwain.
- 4Layer remaining stuffing at bottom, then stuffed veg + sweet potato + papdi + peas.
- 5Drizzle 2 tbsp water, cover, slow-cook 35 min on lowest heat (undhiyu = upside-down style).
- 6Toss gently to combine; serve with poori or jowar roti.
