Method
- 1Dry-roast sesame on low till lightly golden and fragrant; cool.
- 2Melt jaggery in heavy pan + 1 tbsp water; cook till syrup reaches hard-ball (drop in cold water makes hard ball).
- 3Off heat, add cardamom and sesame; stir fast.
- 4Pour on greased plate; flatten with greased rolling pin to 5 mm thick.
- 5While warm, score into squares.
- 6Cool fully; break along lines and store airtight.
