Method
- 1Mix flours + methi + ginger-chilli + spices + jaggery + 1 tbsp oil + salt; add little water for tight dough.
- 2Shape into 2 thick logs.
- 3Steam 18 min till firm (toothpick comes clean).
- 4Cool 10 min; slice into 1/2-inch rounds.
- 5Tarka: oil, cumin-mustard, sesame.
- 6Toss muthia pieces through tarka 2 min till lightly cook until crunchy; serve warm.
