Method

  1. 1Mix flours + methi + ginger-chilli + spices + jaggery + 1 tbsp oil + salt; add little water for tight dough.
  2. 2Shape into 2 thick logs.
  3. 3Steam 18 min till firm (toothpick comes clean).
  4. 4Cool 10 min; slice into 1/2-inch rounds.
  5. 5Tarka: oil, cumin-mustard, sesame.
  6. 6Toss muthia pieces through tarka 2 min till lightly cook until crunchy; serve warm.
