Method
- 1Gently bubble tamarind + jaggery + 1/4 cup water + turmeric + salt 5 min till thick.
- 2Heat oil, crackle cumin-mustard, asafoetida.
- 3Pop chana dal + urad dal till golden; add peanuts; toast.
- 4Curry leaves and dry chillies in for 5 sec.
- 5Pour tamarind mix in, gently bubble 2 min.
- 6Toss cooled rice through; serve at room temp or pack for travel.
