Method
- 1Rub jackfruit with oil before chopping (sticky).
- 2Pressure-cook jackfruit with 1 cup water + salt 3 whistles till just tender.
- 3Heat oil, crackle cumin, fry onion till golden.
- 4Ginger-garlic, then tomato puree + spices; cook till oil separates.
- 5Add jackfruit; gently bubble 10 min, add tamarind and jaggery.
- 6Garam masala + coriander; serve with hot roti.
