Method

  1. 1Mix besan + ajwain + half the chilli + salt + 1 tbsp oil; squash and fold tight dough with little water.
  2. 2Shape into 3 long ropes, boil in salted water 8 min, cool, slice into 1-inch pieces.
  3. 3In ghee, crackle cumin-mustard, asafoetida.
  4. 4Beat curd with 1 cup water + remaining chilli, coriander powder, turmeric; pour in.
  5. 5Gently bubble 5 min stirring (curd-base — never high heat).
  6. 6Drop gattas in, gently bubble 5 min, garam masala, coriander.

About this recipe

Use coconut yoghurt + oil instead of ghee/curd to make vegan.
