Method

  1. 1Filling: heat oil, crackle cumin-mustard, asafoetida; fry curry leaves, ginger, chillies.
  2. 2Mix into potato mash with turmeric, salt, coriander.
  3. 3Shape into 10 balls (golf-ball size).
  4. 4Batter: besan + chilli + 1/2 cup water — thick coating consistency.
  5. 5Dip balls in batter; arrange on lined tray.
  6. 6Brush with oil; bake 200C for 22 min till golden. Serve with green chutney.

About this recipe

Use coconut yoghurt + oil instead of ghee/curd to make vegan.
