Method
- 1Filling: heat oil, crackle cumin-mustard, asafoetida; fry curry leaves, ginger, chillies.
- 2Mix into potato mash with turmeric, salt, coriander.
- 3Shape into 10 balls (golf-ball size).
- 4Batter: besan + chilli + 1/2 cup water — thick coating consistency.
- 5Dip balls in batter; arrange on lined tray.
- 6Brush with oil; bake 200C for 22 min till golden. Serve with green chutney.
