Method

  1. 1Beat soy, vinegar, sesame oil, maple and ginger; marinate tofu cubes 8 minutes.
  2. 2Divide rice between two bowls.
  3. 3Arrange edamame, avocado, carrot and cucumber in colour-blocked sections.
  4. 4Pile marinated tofu in the centre, spoon a little extra marinade over.
  5. 5Top with spring onion, sesame and nori shreds.
  6. 6Eat with chopsticks — fresh, lean, satisfying.
