Method
- 1Beat soy, vinegar, sesame oil, maple and ginger; marinate tofu cubes 8 minutes.
- 2Divide rice between two bowls.
- 3Arrange edamame, avocado, carrot and cucumber in colour-blocked sections.
- 4Pile marinated tofu in the centre, spoon a little extra marinade over.
- 5Top with spring onion, sesame and nori shreds.
- 6Eat with chopsticks — fresh, lean, satisfying.
