Method

  1. 1Toast bread slices till just golden.
  2. 2Mix corn, mozzarella, parmesan, red onion, chilli, yogurt, herbs and salt.
  3. 3Pile thick on each toast.
  4. 4Brush edges with olive oil.
  5. 5Bake at 220C for 8 minutes till the cheese bubbles golden.
  6. 6Scatter coriander, chilli flakes — quick snack, no skillet needed.
