Goma-ae (sesame spinach) is a Japanese side dish that asks almost nothing of the spinach except that it be tender and squeezed dry. The real work is in the sesame seeds themselves—toasting them wakes up their oils and flavor in a way that raw seeds can't. The dressing is gentle, a balance of salty (coconut aminos), nutty (sesame oil), and just enough sweetness to make everything sing. At 4g net carbs per serving and nearly all fiber, spinach is the keto vegetable.

The mistake here is either over-squeezing the spinach (leaving it stringy and bitter) or under-squeezing it (leaving a pool of water that dilutes the dressing). Blanch until just tender—longer and it loses its bright green—then squeeze until you've removed most but not all of the water; a little moisture helps the dressing cling. If you have black sesame seeds, mix them with white for a striking presentation, though the flavor is slightly more bitter.

Method

  1. 1Bring a large pot of salted water to a boil. Add spinach and blanch for 1–2 minutes until tender.
  2. 2Drain spinach in a colander and gently squeeze out excess water by pressing with the back of a spoon.
  3. 3Toast sesame seeds in a dry pan over medium heat for 2–3 minutes, stirring occasionally, until fragrant. Transfer to a mortar and pestle and coarsely grind.
  4. 4In a small bowl, whisk together coconut aminos, sesame oil, rice vinegar, monk fruit sweetener, minced garlic, and salt.
  5. 5Place blanched spinach on a serving plate or in a small bowl. Pour the sesame dressing over the spinach.
  6. 6Top generously with toasted ground sesame seeds and a pinch of sea salt.
  7. 7Serve chilled or at room temperature as a simple starter or side.
