Method
- 1Beat besan with water, nutritional yeast, kala namak, regular salt, turmeric and baking powder till smooth.
- 2Stir in onion, tomato, spinach, green chillies and coriander.
- 3Heat a non-stick pan, drizzle olive oil.
- 4Pour batter and spread thin like a pancake.
- 5Cook 3 minutes till the underside is deeply golden; flip carefully and cook 90 seconds.
- 6Gently mix in half; serve with toast and salsa — fluffy, savoury, plant-based.
