Method

  1. 1Press tofu in a clean cloth for 5 minutes to lose excess water. Crumble into rough curd-like pieces.
  2. 2Heat oil; fry onion till translucent, then ginger-garlic and green chilli.
  3. 3Add tomato and the dry masalas. Cook till tomato breaks down, 4 minutes.
  4. 4Gently mix in tofu and salt. Stir-fry on medium-high 4 minutes till the bhurji feels dry. Finish with kala namak and coriander.
