Method

  1. 1Boil mustard greens and spinach with green chilli and ginger until very soft (20 min).
  2. 2Blend coarsely, then return to the pan with maize flour to thicken.
  3. 3Gently bubble low for 20–25 min, stirring, until thick and shiny.
  4. 4Heat ghee, add ginger-garlic, pour the frying the spices in; season.
  5. 5Top with a little butter; serve hot with makki di roti.
