Method
- 1Boil mustard greens and spinach with green chilli and ginger until very soft (20 min).
- 2Blend coarsely, then return to the pan with maize flour to thicken.
- 3Gently bubble low for 20–25 min, stirring, until thick and shiny.
- 4Heat ghee, add ginger-garlic, pour the frying the spices in; season.
- 5Top with a little butter; serve hot with makki di roti.
