Method

  1. 1Marinate paneer with yoghurt, ginger-garlic, chilli, garam masala, methi and salt for 30 minutes.
  2. 2Heat a grill pan and brown quickly paneer cubes 1 minute per side until charred. Reserve.
  3. 3Heat oil, fry onion till golden. Add ginger-garlic, tomato puree, chilli, coriander powder; cook 8 minutes till oil separates.
  4. 4Add 1 cup water; gently bubble 5 minutes, then blend smooth (optional) and return to the pan.
  5. 5Stir in cream and the charred paneer; gently bubble 3 minutes.
  6. 6Finish with extra methi and serve with naan.

About this recipe

Replace paneer with extra-firm tofu cubes pressed dry; replace cream with cashew cream.
