Method

  1. 1Heat oil + butter; soften onion till golden, then ginger-garlic for 30 seconds.
  2. 2Add tomato puree with salt, kashmiri chilli and 1/4 cup water. Cook 10 minutes till oil separates.
  3. 3Stir in cashew paste, gently bubble 3 minutes, then the grated paneer — it melts into the gravy.
  4. 4Add paneer cubes, garam masala, kasuri methi and cream. Cover for 4 minutes off heat.

About this recipe

Use tofu cubes plus 2 tbsp grated tofu for the signature melt-in texture.
