Method

  1. 1Dry-fry mushrooms on high heat in a dry pan till they release water and re-absorb, 6 minutes; put aside.
  2. 2In oil, crackle cumin and fry onion till brown.
  3. 3Add ginger-garlic paste, tomato puree and dry masalas; cook 6 minutes till shiny.
  4. 4Gently mix in mushrooms, peas and 1/2 cup water; gently bubble 6 minutes. Finish with garam masala and coriander.
