Method

  1. 1Mix everything in a bowl. Add curd slowly to make a soft, smooth dough; rest 10 minutes.
  2. 2Divide into 8 balls. Roll each into a thin 18 cm circle, dusting with atta.
  3. 3Cook on a hot flat pan 45 seconds per side, then smear 1/4 tsp oil and press till brown spots form.
  4. 4Stack between a cloth to keep soft. Serves 2 thepla per person.

About this recipe

Use water + 1 tbsp oil instead of curd; result is slightly drier but still soft.
