Amchur (dried mango powder) is the backbone—it gives that sour-spice punch without adding sugar. Most restaurant versions hide starch in the sauce; we skip it entirely and let the vegetables provide crunch and the paneer provide cream. Green chilies and curry leaves stay sharp and volatile on a quick high heat, so don't overcook. Mustard oil has a distinct peppery bite that's essential to the achari profile; if you can't source it, substitute with 1.5 tbsp coconut oil + 0.5 tbsp extra-virgin olive oil and add an extra 0.25 tsp black mustard powder for approximation.
