Method
- 1Pressure-cook toor with turmeric, tomato, salt 4 whistles; mash lightly.
- 2Stir in tamarind + jaggery + 1 cup water for sweet-tart base; gently bubble 4 min.
- 3Tarka: oil, cumin-mustard, asafoetida, curry leaves, dry chillies.
- 4Add red chilli powder, pop 5 sec.
- 5Pour tarka over dal; gently bubble 2 min combined.
- 6Coriander; serve over rice with ghee dot.
