Method
- 1Briefly boil methi 1 min, refresh in cold water (removes bitterness).
- 2Heat ghee, crackle cumin; fry onion till just translucent (not brown — keeps white).
- 3Add ginger-chilli + coriander powder; pop 30 sec.
- 4Stir in curd + cashew paste off heat, then return; gently bubble 4 min.
- 5Add methi + paneer + cream + jaggery; gently bubble 5 min on low.
- 6Garam masala + salt; serve with phulka.
About this recipe
Use coconut yoghurt + oil instead of ghee/curd to make vegan.
