Method

  1. 1Briefly boil methi 1 min, refresh in cold water (removes bitterness).
  2. 2Heat ghee, crackle cumin; fry onion till just translucent (not brown — keeps white).
  3. 3Add ginger-chilli + coriander powder; pop 30 sec.
  4. 4Stir in curd + cashew paste off heat, then return; gently bubble 4 min.
  5. 5Add methi + paneer + cream + jaggery; gently bubble 5 min on low.
  6. 6Garam masala + salt; serve with phulka.

About this recipe

Use coconut yoghurt + oil instead of ghee/curd to make vegan.
