Method

  1. 1Cook pasta just firm; drain.
  2. 2Melt 3 tbsp butter; beat flour, cook 1 min (flour-butter base).
  3. 3Stir in milk, gently bubble to thicken 4 min.
  4. 4Off heat, gently mix in cheeses, mustard, paprika, salt, pepper.
  5. 5Toss pasta through; tip into baking dish.
  6. 6Toss breadcrumbs in melted butter; scatter; bake 200C 18 min till golden bubbly.
