Method

  1. 1Heat oven to 220C; toss broccoli florets with olive oil, paprika, chilli flakes, garlic and salt.
  2. 2Roast 18 minutes till deeply charred at the tips.
  3. 3Beat tahini, lemon, maple, salt and warm water to a pourable sauce.
  4. 4Plate broccoli, drizzle tahini sauce generously.
  5. 5Scatter almond slivers and dust sumac.
  6. 6Eat warm — char + toasted-tasting + lemon-bright.
