Method
- 1Pat bhindi dry — moisture makes it slimy.
- 2Heat sesame oil in a wide pan, crackle mustard, cumin, urad dal, dried chillies and curry leaves.
- 3Add hing, then bhindi.
- 4Brown quickly hard on high heat 6 minutes without moving for char.
- 5Toss; cook 6 more minutes till cook until crunchy at edges.
- 6Dust pepper, chilli powder, coriander powder, turmeric, salt; toss to coat — pepper-forward Andhra side.
