About this recipe
Avial is the gentle sister to thoran: a mild, almost meditative stew where vegetables braise in their own steam with grated coconut and coconut oil, seasoned only with cumin seeds, turmeric, and salt. Cucumber and zucchini soften first, green beans and carrot follow, and the whole pot becomes a study in subtlety. There's no tomato, no hot spice, just the whisper of coconut and the earthiness of cumin.
At 200 calories and just 10g net carbs, this dish proves that keto doesn't require intense flavor or technique—sometimes less says more. The 3g of protein means it's best paired with something rich: alongside eggs, paneer, or a fat-forward curry. The beauty is in simplicity: 20 minutes, a handful of vegetables, a single spice or two, and you've got something that settles your stomach and tastes like care. This is temple-kitchen food, quiet and nourishing. Serve warm, or at room temperature as a side. It keeps well for a day and tastes subtly better the next morning, once the spices have mellowed into the coconut oil.
