Method
- 1Beat olive oil, lime juice, zest, coriander, garlic, cumin, paprika, chilli flakes, honey, soy and salt.
- 2Toss chicken in the marinade; rest 15 minutes.
- 3Heat a wide skillet, lift chicken from marinade and brown quickly on high — 4 minutes without moving for char.
- 4Toss and cook 4 more minutes; pour leftover marinade in for the last 90 seconds — reduces to a coat with sticky liquid.
- 5Off heat, scatter extra coriander and an extra squeeze of lime.
- 6Serve over rice or rolled into tortillas — bright, smoky, lean.
